A quick and easy homemade flatbread recipe packed with protein from cottage cheese, perfect for snacks or light meals. This flatbread is creamy, fluffy, and versatile with simple pantry ingredients.

  • 1 cup (8 oz / 240g) low-fat small-curd cottage cheese
  • 1 cup (4.25 oz / 120g) all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Optional toppings:
  • 1/4 cup shredded mozzarella or cheddar cheese
  • Fresh herbs like rosemary or thyme
  • Thinly sliced cherry tomatoes or olives
  • Cracked black pepper or chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cottage cheese and eggs. Use a whisk or fork to break down the curds until mostly smooth.
  3. Add the flour, baking powder, and salt. Stir gently until a sticky dough forms. If too wet, sprinkle a little more flour.
  4. Drizzle in the olive oil and mix it through.
  5. Turn the dough onto a floured surface and lightly knead 2-3 times to bring it together. Avoid over-kneading.
  6. Roll out the dough into a roughly 10-inch (25 cm) circle or rectangle about 1/4 inch (6 mm) thick. Dust with flour if it sticks.
  7. Transfer the rolled dough onto a parchment-lined baking sheet. Add optional toppings evenly if desired.
  8. Bake for 15-18 minutes until golden brown with slightly crisp edges and cooked through.
  9. Remove from oven and let cool for 5 minutes to set.
  10. Slice into wedges or squares and serve warm.

Notes

Do not over-knead the dough to keep it tender. Use room temperature eggs and cottage cheese for smooth mixing. For crispier edges, bake on a preheated pizza stone. If edges brown too quickly, tent with foil halfway through baking. Dough can be refrigerated up to 24 hours before baking. Store leftovers refrigerated up to 3 days or frozen up to 2 months. Reheat in oven or toaster oven for best texture.
