These high-protein chocolate chip cookies are soft, chewy, and packed with protein, making them a perfect guilt-free treat for any occasion.

  • 1 cup (90g) rolled oats (ground into oat flour)
  • 1/2 cup (60g) vanilla protein powder (whey or plant-based)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (60ml) coconut oil, melted (or unsalted butter, melted)
  • 1/4 cup (60ml) pure maple syrup or honey
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (90g) dark chocolate chips or chunks (70% cocoa preferred)
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: A pinch of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. Prepare the oat flour by placing 1 cup of rolled oats in a food processor or blender and pulse until it reaches a fine, flour-like consistency (about 30-45 seconds).
  3. In a medium bowl, combine the oat flour, 1/2 cup vanilla protein powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Stir well.
  4. In another bowl, whisk together the melted coconut oil, maple syrup, egg, and vanilla extract until smooth and slightly frothy (1-2 minutes).
  5. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  6. Fold in the dark chocolate chips and optional nuts or cinnamon if using.
  7. Using a tablespoon or cookie scoop, drop rounded spoonfuls onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
  9. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling.

Notes

If dough is too sticky, chill for 15 minutes before baking. If crumbly, add a teaspoon of almond milk or water. Use parchment paper or silicone mat to prevent sticking. For vegan version, substitute egg with flax egg and use plant-based protein powder and vegan butter or coconut oil.
