These golden, airy cheese puffs are crisp on the outside, tender inside, and bursting with cheesy goodness. Perfect for parties, brunches, or as a savory snack.

  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (120ml) water
  • Pinch of salt
  • 2 large eggs (room temperature)
  • 3/4 cup (75g) grated cheese (Gruyère, cheddar, or Parmesan)
  • Optional: Pinch of nutmeg or dash of cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt. Heat over medium until the butter melts and the mixture comes to a boil.
  3. Reduce the heat to low and quickly stir in the flour. Stir vigorously until the dough pulls away from the sides of the pan and forms a smooth ball, about 1-2 minutes.
  4. Remove the dough from the heat and let it cool for 5 minutes.
  5. Add the eggs one at a time, mixing well after each addition until the dough is thick and glossy.
  6. Stir in the grated cheese and any optional seasonings.
  7. Use a piping bag or spoon to drop tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 20-25 minutes, or until the puffs are golden brown and crisp. Avoid opening the oven door during baking.
  9. Let the cheese puffs cool slightly on the baking sheet before serving. Serve warm.

Notes

For the best texture, use freshly grated cheese instead of pre-shredded. Avoid opening the oven door during baking to prevent deflation.
