  • ½ teaspoon salt
  • 1 cup (240 grams) creamy peanut butter
  • ½ cup (120 grams) creamy peanut butter (for filling)
  • 1 cup (120 grams) powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the mixture and beat until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Add creamy peanut butter to the dough and mix until fully incorporated. The dough should be soft but not sticky.
  6. Roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheets, spaced about 2 inches apart.
  7. Using a fork, gently press down each ball twice—once in one direction and then again perpendicular to create the classic crisscross pattern.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will look slightly underdone in the center but will firm up as they cool.
  9. While the cookies cool, prepare the peanut butter filling. In a medium bowl, combine creamy peanut butter, powdered sugar, and milk. Mix until smooth and creamy. Add more milk if needed to reach the desired consistency.
  10. Once the cookies are completely cool, spread about 1 teaspoon of the peanut butter filling onto the flat side of one cookie and sandwich it with another cookie. Repeat until all cookies have been paired.
  11. Store the finished cookies in an airtight container at room temperature for up to 5 days—or freeze for longer storage.
