  • 1 can of creamed corn
  • 1 box of cornbread or muffin mix (e.g., Jiffy)
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • 2 large eggs
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cornbread mix and a pinch of salt. Stir to combine.
  3. In a separate bowl, whisk together the sour cream, melted butter, eggs, and honey until smooth.
  4. Fold both the creamed corn and drained whole kernel corn into the wet mixture. Stir gently to combine.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Pour the batter into the prepared baking dish and smooth it out with a spatula.
  7. Bake for 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. While the casserole is baking, gently warm 1/4 cup of honey in a small saucepan until it’s pourable.
  9. Once the casserole is out of the oven, drizzle the honey evenly over the top.
  10. Let the casserole rest for 5-10 minutes before serving.
