  • 3 lbs country style pork ribs (boneless or bone-in)
  • Salt and black pepper, to taste
  • 12 tbsp olive oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 4 cloves fresh garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar (optional, light or dark)
  • 1/2 tsp ground ginger
  • 1/2 cup water or chicken broth
  • Sesame seeds (optional, for garnish)
  • Sliced scallions (optional, for garnish)
  • Red pepper flakes (optional, for heat)
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp cold water (for cornstarch slurry)

Instructions

  1. Pat the country style pork ribs dry with paper towels. Season both sides with salt and black pepper.
  2. Set Instant Pot to ‘Sauté’ mode. Add olive oil and, working in batches, sear ribs on each side for 2-3 minutes until golden brown. Remove ribs to a plate as they brown.
  3. In a small bowl, whisk together honey, soy sauce, ketchup, apple cider vinegar, brown sugar, minced garlic, ground ginger, and water or chicken broth until well combined.
  4. With the Instant Pot still on ‘Sauté,’ pour in a splash of the sauce and use a wooden spoon to scrape up any browned bits from the bottom.
  5. Return all ribs to the pot and pour the remaining sauce over them, turning to coat. Arrange in a single layer if possible.
  6. Lock the Instant Pot lid and set the valve to ‘Sealing.’ Select ‘Pressure Cook’ (or ‘Manual’) and cook on high pressure for 35 minutes for boneless ribs (40 minutes for bone-in). It will take about 10 minutes to come to pressure.
  7. When the cook time is up, let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure.
  8. Remove ribs to a baking sheet. Set Instant Pot to ‘Sauté’ and simmer the sauce for 5-7 minutes to reduce. For a thicker glaze, stir in a slurry of cornstarch and cold water, and cook until thickened.
  9. Preheat oven broiler. Brush ribs with some of the thickened sauce and broil for 3-5 minutes, until bubbly and caramelized. Watch closely to avoid burning.
  10. Garnish with sesame seeds and sliced scallions if desired. Serve hot with extra sauce on the side.

Notes

For gluten-free, use tamari or coconut aminos instead of soy sauce. Searing the ribs adds depth of flavor but can be skipped if short on time. Natural pressure release is key for tender ribs. Broiling at the end caramelizes the sauce for a sticky finish. Leftovers keep well and taste even better the next day. You can double the recipe in an 8-quart Instant Pot, but do not exceed the fill line.
