This apple cider coffee cake is the perfect blend of sweet, cinnamon spice, and a touch of tangy apple flavor. It’s moist yet fluffy, with a deliciously gooey cinnamon swirl in every bite.

  • 2 1/2 cups all-purpose flour (or substitute with a gluten-free blend)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 cup apple cider (preferably fresh and unfiltered for maximum flavor)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1 cup powdered sugar
  • 23 tablespoons apple cider (adjust for desired consistency)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line the bottom with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar using an electric mixer on medium speed until light and fluffy—about 2–3 minutes.
  4. Add the eggs, one at a time, and beat until fully incorporated. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the apple cider. Start and end with the dry ingredients, mixing just until combined.
  6. Prepare the cinnamon swirl by mixing the brown sugar, cinnamon, and melted butter in a small bowl until it forms a paste-like consistency.
  7. Pour half of the cake batter into the prepared pan and spread it evenly. Spoon the cinnamon swirl mixture on top and gently swirl it into the batter using a butter knife or skewer. Be careful not to over-mix!
  8. Top with the remaining batter, spreading it evenly to cover the swirl.
  9. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  10. While the cake cools, make the glaze by whisking together powdered sugar, apple cider, and vanilla extract. Drizzle the glaze over the cooled cake and let it set for a few minutes before slicing.
