Soft, chewy cookies infused with apple cider and topped with a sweet cinnamon glaze—perfect for fall parties and gatherings.

Ingredients

Scale
  • 1 cup apple cider (reduced to 1/4 cup)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/4 teaspoon cinnamon (for glaze)

Instructions

  1. Pour the apple cider into a medium saucepan and simmer over medium heat until reduced to about 1/4 cup (around 15 minutes). Let it cool completely.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until fluffy. Add the egg and reduced cider, mixing until combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be slightly sticky.
  5. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underdone.
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a cooling rack.
  10. In a small bowl, whisk together powdered sugar, milk, and cinnamon until smooth. Drizzle over the cooled cookies.

Notes

Chilling the dough prevents spreading, and reducing the cider is essential for concentrated flavor. Adjust glaze consistency with milk or powdered sugar as needed.
