  • 1 teaspoon mustard (Dijon or yellow)
  • Pinch of freshly ground black pepper
  • ½ teaspoon garlic powder (optional)
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if using.
  2. Cut each bacon slice in half. If bacon is very thick, partially cook it in the microwave for 2-3 minutes to render some fat.
  3. Wrap one piece of bacon tightly around each little smokie and secure with a toothpick.
  4. Place all wrapped smokies in a large mixing bowl. Add brown sugar, honey or maple syrup (if using), mustard, garlic powder, and black pepper.
  5. Toss gently to coat each bacon-wrapped smokie evenly with the seasoning mixture.
