  • 24 canned water chestnuts, rinsed and patted dry
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain the canned water chestnuts and rinse under cold water. Pat them dry thoroughly with paper towels.
  3. In a medium bowl, combine brown sugar, soy sauce, garlic powder, and black pepper. Stir until sugar is dissolved and mixture is glossy.
  4. Add the dried water chestnuts to the glaze mixture and stir to coat evenly.
  5. Cut each bacon slice in half. Wrap one piece of bacon around each glazed water chestnut and secure with a toothpick.
  6. Place each bacon-wrapped water chestnut on a wire rack set over a baking sheet, seam side down. If no rack is available, place directly on the baking sheet and rotate halfway through baking.
  7. Bake for 20-25 minutes until bacon is crispy and browned, turning once halfway if placed directly on the sheet.
  8. Let rest on the rack for 5 minutes before serving to firm up the glaze.

Notes

Pat water chestnuts dry thoroughly to avoid soggy bacon. Use thin or medium-cut bacon for best results. Wrapping bacon tightly helps crispness. Rotate halfway if baking directly on sheet. Can finish with broil for 1-2 minutes if bacon isn’t crisping fast enough. Store leftovers in airtight container refrigerated up to 3 days and reheat in oven at 350°F for 10 minutes. Avoid microwaving to keep bacon crispy.
