These brie and cranberry phyllo cups are a quick, easy, and elegant appetizer perfect for Friendsgiving or holiday parties. They combine flaky phyllo, creamy brie, and tangy cranberry sauce for a crowd-pleasing bite.

Ingredients

  • Phyllo dough sheets (thawed according to package instructions)
  • Unsalted butter, melted (for brushing)
  • Brie cheese, cut into small cubes or slices
  • Cranberry sauce (homemade or store-bought)
  • Walnuts or pecans, roughly chopped (optional)
  • Fresh thyme or rosemary leaves (optional)
  • Honey (optional, for drizzling before serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Once thawed, carefully unroll the phyllo sheets and keep them covered with a damp towel to prevent drying out.
  3. Lightly coat each cup of a standard 12-cup muffin tin with melted butter.
  4. Cut one phyllo sheet into 4×4 inch squares and place one square into each muffin cup, pressing gently to form a cup shape.
  5. Add 3-4 phyllo squares per cup, brushing melted butter between each layer to build flaky, golden texture.
  6. Place a cube or slice of brie into each phyllo cup, being generous but not overflowing.
  7. Spoon about a teaspoon of cranberry sauce on top of the brie. If desired, sprinkle chopped walnuts or pecans.
  8. Optionally, sprinkle fresh thyme or rosemary leaves on each cup.
  9. Bake in the oven for 15-18 minutes until phyllo is golden and crisp and brie is melted.
  10. Let the cups cool slightly for about 5 minutes before serving.
  11. Drizzle a tiny bit of honey on top if desired, then plate and enjoy.

Notes

Keep phyllo covered with a damp towel to prevent drying and cracking. Brush butter generously between phyllo layers for crispness. Do not overfill cups to avoid leaking. Let cups cool slightly before serving to avoid burns. Can be prepped ahead and baked just before serving. For dairy-free, use cashew-based cheese and coconut oil instead of butter. For gluten-free, substitute phyllo with mini gluten-free tart shells.
