Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (100g) brown sugar, packed
  • 1 tsp ground cinnamon
  • 2 tbsp (28g) unsalted butter, melted
  • 1 cup (120g) powdered sugar, sifted
  • 2 tbsp (30ml) milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add the egg and vanilla extract, then mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. If the dough feels too sticky, chill it in the fridge for 15 minutes.
  4. In a small bowl, mix the brown sugar, cinnamon, and melted butter until it forms a paste-like consistency.
  5. Roll the dough into small balls (about 1 tablespoon each). Flatten each ball slightly with your hand, then use your thumb to make a small indentation in the center.
  6. Spoon a small amount of the cinnamon sugar filling into the indentation of each cookie, making sure not to overfill.
  7. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If the glaze is too thick, add a little more milk, one teaspoon at a time.
  9. Drizzle the glaze over the cooled cookies using a spoon or a piping bag. Let the glaze set for about 10 minutes before serving.
