  • 3/4 cup (150g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) butterscotch chips
  • 1 cup (175g) chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, and salt.
  3. In a large mixing bowl, use an electric mixer to beat unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs, one at a time, followed by vanilla extract. Mix until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  6. Fold in butterscotch chips and chocolate chips until evenly distributed throughout the dough.
  7. Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
