Instructions

  1. Pour 1 cup (240 ml) cold water into a mixing bowl. Sprinkle 3 tablespoons (30 grams) of unflavored gelatin evenly over the surface and let it sit for 5 minutes until it absorbs the water and swells.
  2. Gently warm the gelatin mixture over a double boiler or in short bursts in the microwave (about 20 seconds). Stir until fully dissolved and clear, avoiding overheating.
  3. Stir in 1/4 cup (50 grams) sugar and 2 tablespoons (30 ml) fresh lemon juice while the gelatin is still warm. Mix well until the sugar dissolves.
  4. Slowly pour 1 cup (240 ml) champagne into the gelatin mixture, stirring gently to combine without losing the bubbles.
  5. Transfer the mixture into jello shot cups, filling each about three-quarters full. Add optional garnishes like a raspberry or mint leaf if desired.
  6. Place the cups in the refrigerator and let them set for at least 4 hours, preferably overnight, avoiding the freezer.
  7. Serve chilled, garnished with edible glitter or mint sprigs for extra flair.
