  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together all-purpose flour, cream of tartar, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to beat softened unsalted butter with granulated sugar and packed brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs, one at a time, followed by vanilla extract. Scrape down the sides of the bowl as needed to ensure everything is well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing to keep your cookies soft and tender.
  6. In a small bowl, mix granulated sugar with ground cinnamon to make the cinnamon-sugar coating.
  7. Roll tablespoons of dough into balls, then coat each one generously in the cinnamon-sugar mixture.
  8. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 8-10 minutes. The edges should be set, but the centers will look soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
