  • 2 boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 teaspoon ground paprika
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • Optional toppings: chopped nuts, sesame seeds, sriracha, cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice the sweet potatoes into bite-sized cubes. Toss them with 1 tablespoon of olive oil, 1 teaspoon of ground paprika, and a pinch of salt and pepper.
  2. Spread the seasoned sweet potatoes on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
  3. Cook your rice according to package instructions. Combine 1 cup of uncooked rice with 2 cups of water in a saucepan, bring to a boil, lower the heat, cover, and simmer for about 15 minutes. Fluff with a fork and set aside.
  4. Cut the chicken into bite-sized pieces and season with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and sear for 2-3 minutes per side until golden brown.
  5. In a small bowl, whisk together 2 tablespoons of honey and 2 tablespoons of soy sauce. Pour the mixture over the chicken in the skillet and toss to coat. Cook for an additional 3-5 minutes, stirring occasionally, until the chicken is fully cooked and the sauce thickens.
  6. Assemble the bowl by layering rice as the base, followed by roasted sweet potatoes and glazed chicken. Garnish with sliced green onions, sesame seeds, chopped nuts, or other toppings. Drizzle with sriracha for extra heat, if desired.
