Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Prepare the brownie batter: In a large mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, whisking until combined.
  3. Gradually sift in the cocoa powder, flour, salt, and baking powder. Stir until the batter is smooth and glossy. Set aside.
  4. Prepare the cookie dough: In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. You can use a mixer or do this by hand.
  5. Mix in the egg and vanilla extract until fully incorporated. Gradually add the flour, baking soda, and salt, mixing until combined. Finally, fold in the chocolate chips.
  6. Assemble the layers: Pour the brownie batter into the prepared pan, spreading it evenly. Drop spoonfuls of the cookie dough on top of the brownie layer, gently pressing down to slightly flatten.
  7. Bake for 30-35 minutes, or until the cookie layer is golden brown and a toothpick inserted into the brownie layer comes out with moist crumbs (not wet batter).
  8. Let the brownies cool completely in the pan before lifting them out using the parchment paper. Slice into squares and enjoy!
