  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • ¾ cup (190g) peanut butter
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a small bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to beat softened unsalted butter, granulated sugar, and brown sugar until creamy and smooth (about 2-3 minutes).
  4. Mix in peanut butter, egg, and vanilla extract. Beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Use a spatula to gently fold in semi-sweet chocolate chips.
  7. Roll the dough into balls about 1 ½ tablespoons in size. Place them on the prepared baking sheets, leaving about 2 inches (5 cm) of space between each cookie.
  8. Bake the cookies for 10-12 minutes, or until the edges are set and slightly golden. The centers will look soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
