Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and espresso powder. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing.
