  • 1 pound lean ground beef
  • 6 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the bowtie pasta according to the package instructions until al dente (about 10-12 minutes). Reserve ½ cup of pasta water before draining and set the pasta aside.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned and cooked through, breaking it into small pieces with your wooden spoon as it cooks (about 6-8 minutes). Season with salt, pepper, and Italian seasoning. Remove the beef from the skillet and set aside.
  3. In the same skillet, melt 4 tablespoons of unsalted butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring constantly until fragrant. Be careful not to let the garlic burn—it should be golden, not brown.
  4. Pour in the chicken broth and stir to combine, scraping any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.
  5. Lower the heat and slowly stir in the heavy cream. Let the sauce simmer for another 3 minutes, stirring occasionally. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it up.
  6. Return the cooked beef to the skillet and mix well to coat it in the sauce.
  7. Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated in the garlic butter sauce.
  8. Remove the skillet from the heat and stir in the grated Parmesan cheese. The cheese will melt into the sauce, creating a creamy, cheesy finish.
  9. Garnish with freshly chopped parsley and serve immediately.
