Irresistible Grilled Pineapple with Brown Sugar

A quick and easy summer dessert featuring caramelized brown sugar and juicy grilled pineapple, perfect for barbecues and gatherings.

  • 1 ripe fresh pineapple
  • 1/4 cup brown sugar (light or dark)
  • 2 tablespoons unsalted butter or neutral oil (vegetable or canola)
  • Optional: squeeze of fresh lime juice
  • Optional: pinch of cinnamon or ground ginger

Instructions

  1. Prepare the pineapple by cutting off the top and bottom, then slice off the skin in strips, removing any eyes. Cut into 1/2-inch thick rings or wedges.
  2. Preheat the grill to medium-high heat (375°F to 400°F). Clean and oil the grill grates to prevent sticking.
  3. In a mixing bowl, combine brown sugar with melted butter or oil. Add optional cinnamon or ground ginger and lime juice if desired. Toss pineapple slices in the mixture until well coated.
  4. Place pineapple slices on the grill and cook undisturbed for 3-4 minutes to develop caramelization and grill marks.
  5. Flip the pineapple slices carefully using tongs and grill the other side for another 3-4 minutes until tender with a sticky, golden crust.
  6. Remove from grill and let cool for a couple of minutes. Serve warm as is or with toppings like vanilla ice cream, toasted coconut, or fresh mint.

Notes

Use a firm, ripe pineapple for best results. Toss pineapple in sugar mixture just before grilling to prevent burning. Flip only once to keep caramel crust intact. If sugar starts to burn, move pineapple to a cooler grill spot or reduce heat. For vegan version, substitute butter with coconut oil and use organic brown sugar.
