  • 2 medium-sized sweet potatoes, peeled and diced
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 small yellow or red onion, finely chopped
  • 1 cup bell peppers (red, yellow, green), chopped
  • 2 cups spinach or kale
  • 2 tablespoons soy sauce (or tamari for gluten-free, or coconut aminos for lower sodium)
  • 1/2 teaspoon ground ginger
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, sesame seeds, sriracha, sour cream

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel and dice the sweet potatoes into small, even cubes. Toss them with 2 tablespoons of olive oil, a pinch of salt, and pepper. Spread them evenly on the baking sheet.
  3. Bake the sweet potatoes for 20-25 minutes, flipping halfway through, until caramelized and tender.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1 minute.
  5. Add the ground beef to the skillet and break it up with a wooden spoon. Cook until browned, about 7-10 minutes.
  6. Stir in soy sauce, honey, ground ginger, and a dash of salt and pepper. Cook for another 2-3 minutes, letting the flavors blend.
  7. Add the bell peppers and greens. Cook until the greens wilt and the peppers soften, about 3-4 minutes.
  8. Divide the roasted sweet potatoes into bowls. Top with the cooked beef and veggie mixture, and add your favorite toppings like cilantro, sesame seeds, or sriracha.
