  • ½ cup (50g) cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (60g) mini marshmallows
  • ¾ cup (130g) chocolate chips
  • Festive sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 2 minutes.
  4. Beat in eggs, one at a time, followed by vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, beating on low speed until just combined.
  6. Gently stir in mini marshmallows and chocolate chips.
  7. Use a cookie scoop or tablespoon to drop dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the marshmallows are gooey.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
