  • 1 teaspoon vanilla extract

  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, use a hand or stand mixer to beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the egg, maple syrup, and vanilla extract, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing to keep the cookies tender.
  6. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked—that’s okay!
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use real maple syrup and avoid overmixing the dough. If your dough is sticky, chill it for 30 minutes before baking. Store cookies in an airtight container for up to 5 days.
