  • 1012 thin slices pancetta (about 4 ounces/115g)
  • 1 tablespoon extra virgin olive oil
  • Zest of 1 lemon
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 cup (25g) finely grated Parmesan cheese (optional)
  • 1 tablespoon finely chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Trim the asparagus by snapping or cutting off the tough woody ends (about 1 to 2 inches). Rinse and pat dry.
  3. Group asparagus into bundles of 4-5 spears each, depending on thickness.
  4. Place bundles in a mixing bowl. Drizzle with olive oil, sprinkle with garlic powder, black pepper, and lemon zest. Toss gently to coat evenly.
  5. Wrap one slice of pancetta snugly around the middle or just below the middle of each asparagus bundle. Secure with a toothpick or kitchen twine if needed.
  6. Arrange bundles seam side down on the prepared baking sheet, spaced slightly apart.
  7. Bake for 15-18 minutes, flipping bundles halfway through to crisp pancetta evenly.
  8. Check that pancetta is crispy and golden brown and asparagus is fork-tender with a slight bite. Add 2-3 minutes if softer asparagus is desired, watching closely to avoid burning.
  9. Remove from oven and transfer to a serving plate. Sprinkle with Parmesan and parsley if using, and add extra black pepper to taste.

Notes

If pancetta slices are thick, precook them in a skillet for 1-2 minutes before wrapping to ensure even crisping. Avoid overcrowding the baking sheet to allow proper roasting. Flipping bundles halfway through baking is crucial for even crispness. For dairy-free, omit Parmesan or substitute with nutritional yeast. Prosciutto can be used instead of pancetta but crisps differently. Leftovers keep well refrigerated for up to 3 days; reheat in oven to maintain crispness.
