A quick and easy appetizer featuring a whole brie wheel wrapped in flaky puff pastry, baked to golden perfection and drizzled with sweet honey. Perfect for parties and gatherings, this recipe balances savory and sweet with minimal fuss.

  • 1 whole round Brie cheese (about 8 ounces / 225 grams)
  • 1 sheet puff pastry, thawed but still cold (about 8x8 inches / 20x20 cm)
  • 23 tablespoons honey, for drizzling
  • 1 large egg, beaten (for egg wash)
  • Optional add-ins:
  • – Chopped nuts like walnuts or pecans
  • – Fresh thyme or rosemary sprigs
  • – A pinch of black pepper or chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C) and position the rack in the middle.
  2. On a lightly floured surface, roll out the thawed puff pastry sheet slightly if needed to smooth creases. Trim edges to create a neat square or circle that will fully wrap your brie.
  3. If using nuts or herbs, scatter them over the center of the puff pastry where the brie will sit.
  4. Place the brie wheel in the center of the puff pastry. Pat dry if needed to avoid sogginess.
  5. Drizzle about 1 tablespoon of honey directly on top of the brie.
  6. Fold the puff pastry up around the brie, pinching and sealing gently at the top. Decorate edges if desired.
  7. Brush the entire wrapped brie with beaten egg wash for a golden, glossy finish.
  8. Place the wrapped brie on a rimmed baking sheet lined with parchment paper or a silicone mat.
  9. Optionally, score the top lightly with a knife to add steam vents and a decorative look.
  10. Bake for 20-25 minutes until the pastry is puffed and deep golden brown.
  11. Remove from oven and let cool for 5 minutes to allow the cheese to thicken slightly.
  12. Drizzle additional honey over the top before serving. Optionally sprinkle fresh thyme or a pinch of sea salt.

Notes

Keep puff pastry cold until just before wrapping to ensure flakiness. Use egg wash for a glossy golden crust. Let the baked brie rest 5 minutes before slicing to avoid cheese running out. For gluten-free, use gluten-free puff pastry. Vegan options available with plant-based cheese and dairy-free puff pastry.
