Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy (about 2 minutes). Beat in the egg, vanilla extract, and pumpkin puree until fully combined.
