  • 3 tablespoons (45 grams) unsalted butter
  • 2 tablespoons fresh herbs (thyme, rosemary, parsley), finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) olive oil
  • Salt to taste (preferably flaky sea salt)
  • Freshly ground black pepper to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse radishes under cold water, trim green tops and root ends, then halve lengthwise. Cut larger radishes into quarters for even cooking.
  3. In a mixing bowl, toss radishes with olive oil, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper until evenly coated.
  4. Arrange radishes cut side down in a single layer on a rimmed baking sheet, avoiding overcrowding.
  5. Roast for 20 minutes, flipping radishes halfway through using tongs or a spatula to ensure even browning.
  6. While radishes roast, melt butter in a small saucepan over low heat. Add minced garlic and chopped fresh herbs, stirring gently for 2–3 minutes until fragrant but not browned.
  7. Remove radishes from oven when tender and golden. Drizzle warm herb butter over them and toss lightly to coat. Sprinkle lemon zest if using.
  8. Serve immediately while warm.
