  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups (270g) semi-sweet or dark chocolate chips
  • Caramel candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat 1 cup (225g) of softened unsalted butter with ¾ cup (150g) granulated sugar and ¾ cup (150g) brown sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer.
  3. Crack in 2 large eggs, one at a time, mixing well after each addition. Then, stir in 2 tsp of vanilla extract.
  4. In a separate bowl, whisk together 2 ½ cups (315g) all-purpose flour, 1 tsp baking soda, and ½ tsp salt.
  5. Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined. Avoid overmixing to keep your cookies soft and tender.
  6. Gently stir in 1 ½ cups (270g) of semi-sweet or dark chocolate chips using a spatula or wooden spoon.
  7. Scoop out 1 ½ tbsp-sized portions of dough and gently roll them into balls. Flatten each ball slightly and place a caramel candy in the center. Wrap the dough around the caramel to fully enclose it and roll it back into a ball.
  8. Arrange the dough balls on the prepared baking sheets, leaving about 2 inches (5 cm) of space between each cookie. Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly underdone.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
