A quick and easy seven-layer party bowl perfect for game day, combining fresh veggies, creamy sour cream, zesty salsa, and melty sharp cheddar cheese over a hearty base of refried beans. This crowd-pleasing snack is versatile, flavorful, and perfect for sharing.

  • 1 can refried beans (about 16 oz / 450 g)
  • 1 cup sour cream (240 ml)
  • 1 cup salsa (240 ml), medium heat
  • 2 cups shredded sharp cheddar cheese (200 g)
  • 1/2 cup chopped green onions (50 g)
  • 1 cup diced tomatoes (150 g), Roma tomatoes preferred
  • 1/2 cup sliced black olives (70 g)
  • 1 small fresh jalapeño, finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped (15 g)
  • Tortilla chips for serving

Instructions

  1. Rinse and dry fresh veggies. Chop green onions, dice tomatoes, slice olives and jalapeños, and chop cilantro. Shred cheese if needed. (About 10 minutes)
  2. Heat refried beans in a microwave-safe bowl for 1-2 minutes until warm but not boiling. Stir in a tablespoon of water if beans are too thick.
  3. Spoon warmed refried beans evenly into the bottom of your serving bowl and smooth the surface.
  4. Spread sour cream evenly over the beans. Optionally, mix sour cream with half the salsa before spreading for extra flavor.
  5. If sour cream and salsa were not mixed, spoon salsa over the sour cream layer and smooth gently.
  6. Sprinkle shredded cheddar cheese evenly over the salsa layer, covering all edges.
  7. Scatter chopped green onions, diced tomatoes, sliced olives, jalapeños evenly on top of the cheese. Finish with a sprinkle of fresh cilantro.
  8. Serve immediately or refrigerate for 30 minutes to let layers meld slightly.

Notes

Warm the refried beans before spreading to make layering easier. Use sharp cheddar cheese for best melting without greasiness. Add fresh jalapeños for mild heat and cilantro for freshness. For vegan or dairy-free versions, substitute sour cream and cheese with plant-based alternatives. Store leftovers covered in the fridge up to 3 days; fresh toppings should be added just before serving.
