  • 8 ounces angel hair or linguine pasta (gluten-free pasta works too)
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • Juice and zest of one fresh lemon
  • 1/4 cup dry white wine or chicken broth
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 cups baby spinach or arugula (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of angel hair or linguine and cook according to package instructions until al dente, about 7-9 minutes. Reserve 1/2 cup pasta water, then drain and set aside.
  2. While pasta cooks, pat dry 1 pound of shrimp. Season lightly with salt and pepper.
  3. Heat 2 tablespoons olive oil and 2 tablespoons unsalted butter in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1-2 minutes until fragrant but not browned.
  4. Add shrimp to the skillet in a single layer. Cook for about 2-3 minutes per side until pink and opaque. Remove shrimp and set aside on a plate.
  5. Pour in 1/4 cup dry white wine or chicken broth. Use a wooden spoon to scrape up any browned bits from the pan. Let it simmer and reduce by half, about 2-3 minutes.
  6. Stir in remaining 2 tablespoons butter, lemon juice, lemon zest, and 1/4 teaspoon red pepper flakes. Adjust salt and pepper to taste. If sauce seems too thick, add reserved pasta water a tablespoon at a time until silky.
  7. Return shrimp to the pan along with cooked pasta and 2 cups baby spinach or arugula. Toss gently until greens wilt and everything is coated in the sauce.
  8. Remove from heat and sprinkle 1/4 cup chopped fresh parsley. Plate portions and top with grated Parmesan cheese if desired.

Notes

Avoid overcooking shrimp to prevent rubbery texture. Pat shrimp dry before cooking for better sear. Use reserved pasta water to adjust sauce consistency. Add fresh parsley at the end for brightness. For dairy-free, substitute butter with vegan butter or extra olive oil. Use gluten-free pasta or zucchini noodles for gluten-free version.
