Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash, peel, and cut the carrots into roughly 2-inch pieces.
  3. Bring a large pot of salted water to a boil and add the carrot chunks. Cook for 8-10 minutes or until fork-tender but not falling apart.
  4. Carefully drain the carrots using a colander and let them cool for a minute or two.
  5. Place the boiled carrots on the prepared baking sheet and use a fork or potato masher to gently press them down, flattening them but keeping them intact.
  6. In a mixing bowl, combine olive oil, melted butter, honey, minced garlic, fresh thyme leaves, and a pinch of salt and pepper. Drizzle this mixture generously over the smashed carrots.
  7. Place the baking sheet in the oven and roast for 15-20 minutes, flipping the carrots halfway through for even caramelization.
  8. Optional: Sprinkle with red pepper flakes, lemon zest, or grated Parmesan cheese before serving.
