  • ½ teaspoon salt
  • 1 cup (50g) mini marshmallows
  • 1 cup (170g) semi-sweet chocolate chunks or chips
  • 1 cup (120g) crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
  2. In a large mixing bowl, cream together 1 cup (226g) unsalted butter, softened, ¾ cup (150g) brown sugar, and ½ cup (100g) granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add 1 large egg and 2 teaspoons pure vanilla extract, then mix until fully combined.
  4. In another bowl, whisk together 2 ¼ cups (280g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Don’t overmix—the dough should be slightly sticky.
  6. Fold in 1 cup (170g) semi-sweet chocolate chunks or chips, 1 cup (50g) mini marshmallows, and 1 cup (120g) crushed graham crackers using a spatula or wooden spoon. Make sure they’re evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft. Keep an eye on the marshmallows—they should puff up but not burn.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
