  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups (345g) all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup (50g) granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it generously.
  2. In a large mixing bowl, cream together 1 cup softened unsalted butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in 1 large egg and 1 teaspoon vanilla extract, scraping down the sides of the bowl to ensure everything is well combined.
  4. In a separate bowl, whisk together 2 3/4 cups all-purpose flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  6. Press the dough evenly into the prepared baking pan, smoothing it out with a spatula or your hands.
  7. In a small bowl, mix 1/4 cup granulated sugar and 2 teaspoons ground cinnamon. Sprinkle this mixture evenly over the top of the dough.
  8. Bake for 22-25 minutes, or until the edges are lightly golden and the center appears set. Avoid overbaking.
  9. Remove from the oven and let the bars cool completely in the pan before cutting into squares.
