Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
  2. In a large mixing bowl, cream together 3/4 cup unsalted butter and 1 cup packed brown sugar until light and fluffy, about 2-3 minutes.
  3. Add 1/4 cup molasses and 1 large egg. Mix until well combined, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 2 teaspoons baking soda, 2 teaspoons ground ginger, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the cookies tough.
  6. Roll the dough into small balls, about 1 1/2 tablespoons each. Roll each ball in granulated sugar to coat.
  7. Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.
  8. Bake for 8-10 minutes, or until the edges are set but the centers are soft. Do not overbake—they will continue to set as they cool.
