  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • ½ cup fresh parsley, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • ½ cup extra virgin olive oil
  • 1 tsp red pepper flakes
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or thawed frozen)
  • 1 small red onion, finely diced
  • 1 avocado, diced
  • 1 cup shredded romaine lettuce or mixed greens
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crumbled queso fresco or feta (optional)
  • Fresh lime wedges for serving
  • Tortilla chips for dipping

Instructions

  1. Prepare the Chimichurri Sauce (10 minutes): In a food processor, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, salt, and pepper. Pulse a few times to chop everything finely. With the processor running, slowly drizzle in the olive oil until the sauce is well combined but still slightly chunky. Taste and adjust seasoning if needed. Set aside to let the flavors meld.
  2. Season the Black Beans (5 minutes): In a medium bowl, mix the drained black beans with cumin, smoked paprika, salt, and pepper. Stir gently to combine, keeping the beans intact for texture.
  3. Prep Fresh Layers (10 minutes): Wash and halve the cherry tomatoes, dice the avocado (set aside separately), finely dice the red onion, and measure out corn kernels and lettuce. Keep all ingredients fresh and ready to layer.
  4. Assemble the Bowl (5 minutes): Spread the seasoned black beans evenly on the bottom of your serving bowl. Spoon over a generous layer of chimichurri sauce, gently spreading it out but not mixing. Add the corn kernels as the third layer, followed by the cherry tomatoes, then the diced red onion. Sprinkle shredded cheddar cheese over the veggies, then scatter the crumbled queso fresco. Top with shredded lettuce.
  5. Add Avocado & Serve (2 minutes): Right before serving, add the diced avocado on top for a creamy, fresh finish. Garnish with lime wedges on the side.

Notes

Prepare chimichurri at least 30 minutes ahead for best flavor. Add avocado just before serving to avoid browning. Use dry-rinse canned beans to reduce sodium and canned flavor. Chill assembled bowl 10-15 minutes before serving to meld flavors. Can substitute pinto beans or chickpeas. For vegan option, omit cheese or use vegan cheese alternatives.
