A creamy, dreamy, and healthy breakfast bowl made from frozen bananas and berries, perfect for Valentines Day or any morning you want a wholesome start.

  • 2 medium frozen bananas, peeled and sliced
  • 1 cup frozen strawberries
  • 1/2 cup frozen raspberries
  • 1/4 cup (60 ml) unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon chia seeds
  • Fresh strawberries and raspberries for topping
  • 1/4 cup granola
  • 1 tablespoon shredded coconut (optional)

Instructions

  1. Peel and slice 2 medium ripe bananas, then freeze for at least 2 hours or overnight.
  2. In a high-speed blender or food processor, combine frozen banana slices, 1 cup frozen strawberries, and 1/2 cup frozen raspberries.
  3. Add 1/4 cup unsweetened almond milk and 1 teaspoon pure vanilla extract. Optionally add 1 tablespoon honey or maple syrup for extra sweetness.
  4. Pulse the blender a few times, then blend continuously for 1-2 minutes until smooth and creamy, scraping down the sides as needed. Add more almond milk if too thick.
  5. Gently fold in 1 tablespoon chia seeds with a spatula.
  6. Spoon the nice cream into serving bowls and top with fresh strawberries, fresh raspberries, granola, and shredded coconut if desired.
  7. Serve immediately for best creamy texture.

Notes

Use very ripe bananas with brown spots for best sweetness and creaminess. If blender struggles, let fruit sit out 5 minutes before blending and blend in short bursts. Vanilla extract enhances flavor. Serve immediately for best texture or freeze blended mixture 10-15 minutes for thicker consistency.
