  • 1 cup (225g) small-curd cottage cheese
  • 1 cup (about 150g) fresh strawberries, hulled and sliced
  • 2 tablespoons (30ml) raw or wildflower honey
  • ½ teaspoon (2.5ml) vanilla extract
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons chopped toasted nuts (optional, almonds or walnuts)
  • Fresh mint leaves for garnish

Instructions

  1. Rinse 1 cup (about 150g) of fresh strawberries under cold water. Pat dry, hull, and slice into halves or quarters. Set aside.
  2. In a mixing bowl, combine 1 cup (225g) small-curd cottage cheese with ½ teaspoon vanilla extract and 1 teaspoon finely grated lemon zest (if using). Stir gently until evenly blended.
  3. Spoon the cottage cheese mixture into your serving bowl or glass. Top with the sliced strawberries evenly spread over the surface.
  4. Drizzle 2 tablespoons (30ml) of raw honey over the strawberries and cottage cheese evenly.
  5. Optionally, sprinkle 2 tablespoons of toasted chopped nuts on top and garnish with fresh mint leaves.
  6. Serve immediately or chill for 10 minutes if preferred cooler.

Notes

For a silkier texture, briefly blend the cottage cheese with vanilla and lemon zest in a food processor before assembling. Use small-curd cottage cheese for best texture. Drizzle honey slowly to avoid overly sweet spots. Store leftovers in an airtight container in the fridge for up to 24 hours. Avoid freezing.
