A cozy and flavorful fall-inspired side dish featuring roasted sweet potatoes, toasted walnuts, and caramelized maple syrup. Perfect for gatherings or everyday meals.

Ingredients

Scale
  • 4 medium-sized sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1/2 cup walnuts, roughly chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: A pinch of nutmeg or a drizzle of balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Peel the sweet potatoes and cut them into 1-inch cubes, keeping the pieces uniform in size for even cooking.
  3. In a large mixing bowl, combine the sweet potato cubes, olive oil, maple syrup, cinnamon, salt, and pepper. Toss until the potatoes are well coated.
  4. Arrange the sweet potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  5. Roast the sweet potatoes in the preheated oven for 25 minutes. Flip the sweet potatoes halfway through using a spatula or tongs.
  6. While the sweet potatoes are roasting, toast the chopped walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant.
  7. After 25 minutes, remove the baking sheet from the oven and sprinkle the toasted walnuts over the sweet potatoes. Return the sheet to the oven and roast for an additional 10 minutes.
  8. Check the sweet potatoes for doneness; they should be fork-tender with golden, crispy edges. Roast for an extra 5 minutes if necessary.
  9. Transfer the roasted sweet potatoes and walnuts to a serving dish. Drizzle with extra maple syrup or balsamic glaze if desired.
