  • 8 oz (227 g) Whipped Topping, thawed
  • 20 oz (567 g) Crushed Pineapple, drained
  • 1 cup (50 g) Mini Marshmallows
  • 1 cup (120 g) Chopped Pecans
  • 1/2 cup (75 g) Green Maraschino Cherries (optional)
  • 1 tsp (5 ml) Vanilla Extract
  • 1 cup (240 ml) Cold Water

Instructions

  1. If using frozen whipped topping, thaw it in the fridge overnight or at room temperature for a few hours until smooth and scoopable.
  2. In a large mixing bowl, combine the instant pistachio pudding mix with 1 cup (240 ml) of cold water. Whisk vigorously for about 2 minutes until it thickens slightly.
  3. Gently fold the whipped topping into the pudding mixture using a spatula with slow, sweeping motions to keep the fluff light, about 2-3 minutes.
  4. Drain the crushed pineapple well to avoid excess juice. Fold in the pineapple, mini marshmallows, and chopped pecans. If using, add green maraschino cherries last to keep their shape.
  5. Add 1 teaspoon (5 ml) of vanilla extract and gently fold to combine.
  6. Cover the bowl and refrigerate the salad for at least 1 hour to let flavors meld and the fluff firm up.
  7. Before serving, gently stir the salad and transfer to a serving dish or individual cups. Garnish with extra chopped pecans or a cherry if desired.

Notes

Drain pineapple well to avoid watery salad. Fold ingredients gently to keep fluff light. Chill at least 1 hour or overnight for best flavor. Toast pecans lightly for extra aroma. For dairy-free, use coconut whipped topping and vegan pudding. For nut allergies, omit pecans or substitute with toasted seeds.
