A quick and easy recipe for juicy grilled turkey burgers with fresh veggie toppings that are flavorful, healthy, and perfect for weeknight dinners or guests.

Ingredients

Scale
  • 1 pound ground turkey (93% lean recommended)
  • 1/2 cup breadcrumbs (plain or panko)
  • 1 large egg (room temperature)
  • 2 cloves minced garlic
  • 1/4 cup finely chopped onion (white or yellow)
  • 1 teaspoon Worcestershire sauce (optional but recommended)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Olive oil or avocado oil (for brushing grill and patties)
  • Tomato slices (ripe and firm, for topping)
  • Red onion rings (thinly sliced, for topping)
  • Leafy greens (lettuce or baby spinach, for topping)
  • Pickles (optional, for topping)
  • Soft whole wheat or brioche buns

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375°F / 190°C). Brush the grates or pan with oil to prevent sticking. (5 minutes)
  2. In a large bowl, combine ground turkey, breadcrumbs, egg, minced garlic, chopped onion, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix gently until just combined. (5 minutes)
  3. Divide the mixture into 4 equal portions and shape each into a 3/4-inch thick patty. Make a slight indentation in the center of each patty with your thumb. (5 minutes)
  4. Place the patties on the preheated grill and cook for about 5-6 minutes per side without pressing down. Flip only once. Use a meat thermometer to check for an internal temperature of 165°F (74°C). (12-15 minutes)
  5. While the burgers finish cooking, slice and toast the buns lightly on the grill for 1-2 minutes until golden and slightly crispy. (2-3 minutes)
  6. Assemble the burgers by layering the bottom bun with leafy greens, placing the turkey patty on top, then adding tomato slices, red onion rings, and pickles if using. Cap with the top bun. (3 minutes)

Notes

Do not overmix the meat to avoid dense burgers. Make a thumb indentation in patties to prevent puffing. Use a meat thermometer to ensure internal temperature reaches 165°F. Let burgers rest 3-5 minutes after grilling to redistribute juices. For gluten-free, substitute breadcrumbs with almond flour and use gluten-free buns or lettuce wraps.
