A quick and easy recipe combining seasoned ground beef, melted cheese, and fresh toppings layered over crispy tortilla chips, perfect for parties or casual snacking.

  • 1 lb ground beef (80/20 preferred)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • 1 large bag sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup canned black beans, rinsed and drained
  • 1 large tomato, diced
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • 12 jalapeños, thinly sliced
  • 1/2 cup fresh cilantro, chopped (optional)
  • 1/2 cup sour cream
  • 1 ripe avocado, diced or mashed (optional)
  • Fresh lime wedges

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a large non-stick skillet over medium-high heat and add ground beef. Break apart and cook about 5 minutes until browning.
  3. Add diced onion and minced garlic to the beef. Cook 3-4 minutes until onions are translucent and fragrant.
  4. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef. Mix well and cook another 2 minutes.
  5. Spread a generous layer of tortilla chips on a baking sheet.
  6. Spoon half of the seasoned beef evenly over the chips.
  7. Sprinkle half the cheddar and mozzarella cheese on top, then scatter half the black beans, olives, and jalapeños.
  8. Repeat layers with remaining beef, beans, olives, jalapeños, and cheeses.
  9. Bake in the oven for 10-12 minutes until cheese is melted and bubbly.
  10. Remove from oven and top with diced tomatoes, green onions, cilantro, and avocado.
  11. Drizzle with sour cream and serve immediately with lime wedges.

Notes

For extra crispiness, broil nachos for 1-2 minutes at the end but watch carefully to avoid burning. Warm the baking sheet slightly before loading chips to prevent sogginess. Layer cheese in the middle and on top for gooey texture. Use gluten-free chips and dairy alternatives for dietary needs. Remove jalapeño seeds for less heat.
