  • 1 cup (100 grams) celery, finely chopped
  • 1/2 cup (75 grams) red bell pepper, diced
  • 3 stalks green onion, thinly sliced
  • 3 large hard-boiled eggs, chopped (optional)
  • 1 teaspoon celery seed
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until just tender but still firm to the bite—about 8 minutes. Drain the pasta in a colander and rinse thoroughly under cold water to stop the cooking and cool it down.
  2. While the pasta cooks, finely chop the celery and dice the red bell pepper. Thinly slice the green onions and chop the hard-boiled eggs.
  3. In a large bowl, whisk together Miracle Whip, mayonnaise, Dijon mustard, apple cider vinegar, celery seed, salt, and pepper to make the dressing.
  4. Add the cooled macaroni, chopped veggies, and eggs to the dressing. Gently fold everything together with a silicone spatula, being careful not to break the pasta.
