  • 3/4 cup (170g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon (2g) baking soda
  • 1/2 teaspoon (2g) salt
  • 1/4 teaspoon (1g) cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg, maple syrup, and vanilla extract to the butter mixture and beat until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Scoop out dough using a cookie scoop or spoon (about 1½ tablespoons per cookie) and place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewy cookies, slightly underbake them and let them set on the baking sheet. They’ll firm up as they cool. You can also chill the dough for 15-20 minutes if your kitchen is warm to prevent spreading.
