Maple-Glazed Chicken Recipe with Sweet Potatoes

A delicious one-pan dish featuring juicy chicken, caramelized sweet potatoes, and a heavenly maple glaze. Perfect for weeknight dinners or hosting friends.

  • 4 chicken thighs or breasts (bone-in, skin-on preferred)
  • 2 medium-sized sweet potatoes, peeled and cut into bite-sized chunks
  • 1/4 cup pure maple syrup
  • 5 tablespoons olive oil
  • A few sprigs of fresh thyme
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • 1 teaspoon paprika (smoked or sweet)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper or aluminum foil.
  2. Peel and chop the sweet potatoes into evenly sized chunks, about 1-inch pieces. Toss them in a mixing bowl with 2 tablespoons of olive oil, 1 teaspoon of paprika, and a pinch of salt and pepper.
  3. Pat the chicken dry with paper towels. Rub each piece with a drizzle of olive oil and season generously with salt, pepper, and a sprinkle of smoked paprika.
  4. In a small bowl, whisk together 1/4 cup of pure maple syrup, 1 tablespoon of Dijon mustard, 2 tablespoons of olive oil, 2 minced garlic cloves, and 1 teaspoon of lemon juice. Add a pinch of salt and pepper to taste.
  5. Spread the seasoned sweet potatoes evenly across the lined pan. Arrange the chicken thighs or breasts on top. Drizzle half of the maple glaze over the chicken, brushing to ensure it’s evenly coated.
  6. Place the sheet pan in the preheated oven and roast for 20 minutes. Remove the pan and flip the chicken pieces to ensure even cooking. Drizzle the remaining glaze over the chicken.
  7. Roast for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are fork-tender. The glaze should be caramelized and golden.
  8. For extra crispy skin, switch the oven to broil for the last 2-3 minutes. Keep an eye on it to avoid burning.
  9. Remove the pan from the oven and let the chicken rest for 5 minutes. Sprinkle fresh thyme leaves over the dish and serve warm.
