  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup low-sodium chicken broth
  • 3/4 cup heavy cream (or half-and-half for lighter version)
  • 1/2 cup grated parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides with salt and black pepper.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
  3. In a mixing bowl, whisk together chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, grated parmesan, Italian seasoning, and red pepper flakes.
  4. Place chicken breasts in the bottom of the crockpot. Pour sauce evenly over the chicken, ensuring all pieces are covered.
  5. Cover and cook on LOW for 3.5 to 4 hours, or until chicken is tender and cooked through (internal temp of 165°F).
  6. Remove chicken and slice or shred if desired. Return to crockpot and stir into the sauce.
  7. Sprinkle chopped fresh basil on top before serving.
  8. Serve chicken and sauce over pasta, rice, or mashed potatoes. Add extra parmesan and basil if desired. Taste and adjust salt or pepper before serving.

Notes

For extra flavor, sear the chicken before adding to the crockpot. If sauce is too thin after cooking, let it sit uncovered for 10-15 minutes to thicken. For a lighter version, use half-and-half instead of heavy cream. Add baby spinach or mushrooms in the last hour for extra veggies. Leftovers keep well and flavors deepen overnight.
