A quick and easy Thanksgiving side dish featuring carrots roasted with a sweet-savory miso glaze that balances umami, sweetness, and tang.

Ingredients

  • 1.5 pounds carrots, peeled and cut into uniform sticks or halves
  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon rice vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 clove garlic, minced
  • Freshly ground black pepper, to taste
  • Sesame seeds, for garnish (optional)
  • Fresh parsley or cilantro, chopped, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Peel and slice 1.5 pounds of carrots into even sticks or halves, about 3-4 inches long.
  3. In a mixing bowl, whisk together 3 tablespoons white miso paste, 2 tablespoons honey or maple syrup, 1 tablespoon soy sauce or tamari, 1 teaspoon rice vinegar, 2 tablespoons olive oil, 1 teaspoon grated fresh ginger, and 1 minced garlic clove until smooth and glossy.
  4. Add the carrots to the bowl and toss thoroughly with the glaze until every piece is well coated.
  5. Spread the carrots in a single layer on the prepared baking sheet. Use two pans if needed to avoid overcrowding.
  6. Roast for 20-25 minutes, turning the carrots once halfway through, until tender and caramelized.
  7. Remove from oven, sprinkle with freshly ground black pepper, and optionally garnish with toasted sesame seeds and chopped fresh parsley or cilantro.
  8. Serve warm or at room temperature.

Notes

If glaze is too thick before tossing, add a splash of water or extra olive oil to loosen it. Avoid overcrowding the pan to prevent steaming. Turn carrots halfway through roasting to prevent glaze from burning. Fresh ginger and garlic add warmth and depth. Glaze can be made up to 3 days ahead and stored in the fridge.
