  • 2 cups old-fashioned rolled oats (about 180 g)
  • 1 ½ cups milk (dairy or plant-based, 360 ml)
  • 1 large egg, room temperature
  • ¼ cup brown sugar, packed (50 g)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup semi-sweet or dark chocolate chips (90 g)
  • 2 tablespoons butter or coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 8×8-inch baking dish with butter or non-stick spray.
  2. If desired, pulse ½ cup (45 g) of the oats in a blender or food processor for about 10 seconds until it resembles coarse oat flour. Combine this with the remaining 1 ½ cups (135 g) rolled oats in a large mixing bowl.
  3. In a separate bowl, mash the ripe bananas with a fork until mostly smooth but still a bit chunky.
  4. Add the milk, egg, melted butter, brown sugar, and vanilla extract to the mashed bananas. Whisk until fully combined and smooth.
  5. Add baking powder, cinnamon, and salt to the oat mixture and stir to distribute evenly.
  6. Pour the wet banana mixture into the oats and stir gently until just combined, avoiding overmixing.
  7. Fold in the chocolate chips, reserving a few to sprinkle on top.
  8. Spread the mixture evenly in the greased baking dish and sprinkle the reserved chocolate chips over the top.
  9. Bake for 35–40 minutes or until the top is golden and a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
  10. Let the baked oatmeal rest for 5–10 minutes before slicing and serving.

Notes

Do not overmix the batter to keep the texture tender. Use ripe bananas for natural sweetness and moisture. If the top browns too fast, tent loosely with foil. This baked oatmeal reheats well and can be made ahead. For gluten-free, use certified gluten-free oats. For dairy-free, substitute butter with coconut oil and use plant-based milk.
