  • 3 medium ripe bananas, mashed
  • 2 cups (240 g) all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) packed brown sugar
  • 1/2 cup (113 g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (about 120 g) chopped walnuts, lightly toasted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and optionally line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Fold in mashed bananas gently with a rubber spatula; batter should be thick but moist.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined; avoid overmixing.
  7. Fold in toasted walnuts evenly.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, checking at 60 minutes with a toothpick; it should come out clean or with a few crumbs.
  10. Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness and moisture. Avoid overmixing the batter to prevent a dense loaf. Toast walnuts for extra flavor and crunch. If the top browns too quickly, tent with foil halfway through baking. Room temperature ingredients blend better.
