  • 1 ½ cups (225g) fresh strawberries, mashed
  • ¾ cup (180ml) whole milk, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed until pale and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gently fold in the mashed fresh strawberries using a spatula, being careful not to overmix.
  6. Gradually add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry ingredients. Fold gently after each addition until just combined.
  7. Divide the batter evenly between the prepared pans. Tap the pans lightly to release air bubbles.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, optionally dust with powdered sugar, add whipped cream, or top with fresh strawberry slices.

Use room temperature ingredients for best results. Gently fold in mashed strawberries to keep the batter light and airy. Avoid overmixing to prevent a tough crumb.
